Job Description

As a Sanitation Manager, you will double check our procedures using your in-depth understanding of the latest methods to confirm compliance with industry standards. From store room management to scheduled inspections, your analytical mind and attention to detail will ensure pristine, inviting presentation of all dining services at The Cosmopolitan of Las Vegas.

PRIMARY JOB DUTIES:

Duties include, but are not limited to, the following: Ensure all SNHD regulations are maintained. Maintain knowledge of sanitation, dishwashing, maintenance, and safety standards. Understand the proper use of chemicals and property. Maintain professional grooming and appearance and acts as a role model according to established grooming and appearance policy. Conduct daily, weekly, monthly inspections of all area and shifts. Determine action plans to correct any violations. Conduct weekly supply and chemical inventories. Allocate costs and expenses based on procedures. Create weekly reports on inspections. Storeroom management, security, inventory and storage procedures. Equipment repairs, submitting work orders, purchase requisitions and tracking completion. Fill in any management role required within the department. Responsible for complying with Title 26 policies and procedures. Other duties as assigned.
QUALIFICATIONS:

Required: At least two years related experience. Knowledge of HACCP standards. Proficient in Microsoft Excel, PowerPoint, Word and KRONOS. Polished appearance and demeanor. Excellent customer service skills. Strong written and verbal communication skills with the ability to effectively communicate in English. High school diploma or equivalent. Ability to successfully lead and mentor a team. Ability to obtain and maintain full knowledge and understanding of company and department rules policies, procedures and state & federal regulatory requirements. Ability to interpret an extensive variety of technical instructions in mathematical of diagram form and deal with several abstract and concrete variables. At least 21 years of age.

Preferred: Serve Safe Certification. Previous experience in a large, luxury resort setting.

Ability to distinguish letters, numbers and symbols. Ability to comply with Policies and Procedures, Job Description, daily memorandums, chemical labels (MSDS) and other instructions.
