Olam Food Ingredients ( OFI ) is a new entity born out of Olam International . In a re-organization announced in January of this year, OFI builds on the 30-year history of Olam and is planned for a carve out and potential IPO in 2021. OFI offers sustainable, natural, value-added food products and ingredients so that consumers can enjoy the healthy and indulgent products they love. It consists of Olam’s industry-leading businesses of Cocoa, Coffee, Edible Nuts, Spices and Dairy. OFI has built a unique global value chain presence including its own farms, farm-gate origination and manufacturing facilities. OFI partners with customers, leveraging its complementary & differentiated portfolio of “on-trend” food products, to co-create solutions that anticipate and meet changing consumer preferences as demand increases for healthier food that’s traceable & sustainable.
Reporting to the Vice President of Innovation, the Product Application Scientist will work directly with the coffee Innovation and Research and Development Team at Olam Food Ingredients. The role will design, develop, and commercialize a portfolio of product applications from coffee and novel coffee ingredients. They will work in both laboratory and field or plant settings to undertake experiments on selected projects. The Product Application Scientist will need a deep understanding of product development process for tea & coffee-based beverages, confectionery, bakery, ice cream, jam & jellies, syrups & flavors. The ideal candidate will take calculated risks with Research and Development (R&D) projects and will be outcome oriented. They will be self-aware and eager to lead a group of associates across several geographies. Travel to several sites and across many origins will be required of this position.
Position Responsibilities :
Develop briefs, technical specifications, and technical documentation for product application development. Understand key requirements of our customers and develop a portfolio of product applications such as RTD Coffees, Teas (Iced Tea and Tea bags), Cold Brews, Dry mixes, Energy Drinks, Flavored Syrups, Fortified waters, Kombucha beverage, Hard Seltzer drinks, carbonated beverages, and protein beverages. Create product applications & prototypes with novel ingredients from Olam and present to customers to work collaboratively with business development teams for commercialization. Undertake product demos with customers, gather feedback and use in prototyping and work with flavor houses to develop flavors as required by the customers. Develop protocols and Standard Operating Procedure (SOPs) for undertaking laboratory prototyping and scale up of applications to pilot scale or work with 3 rd parties or customers to scale up and commercialize products. Use techniques of flavor and taste modulation and design formulations that deliver bio-actives within cost parameters desired by customers. Develop sensory evaluation methods and generate data that will be reliable and replicable from prototyping to scale up. Manage product catalog, sampling and manage an inventory and safety of product sample to customers. Maintain laboratory equipment critical to application work within the laboratory. Undertake shelf-life studies as required for ingredients or for product applications. Develop product labels which will meet the regulatory and nutritional declarations using Genesis or other systems meeting product specifications. Collaborate with origin teams, marketing & sales teams to create collaterals for product marketing and customer centric sales opportunities. Listen and engage with customers to understand their jobs to be done and collaborate efficiently. Work with a team of chefs and creative specialists to develop ideas, prototype and present to customers. Perform other duties as assigned.
Bachelor’s degree in Food Science, Food Engineering, Chemistry, or related field is required. Five (5) years of previous Research and Development experience is required. Experience in commercialization of roasted coffee and coffee-based beverages preferred. Experience with scientific literature, publications, and intellectual property is required. Strong communication skills, both verbal and written, and excellent analytical and problem-solving skills are required. Familiarity with Business to Business (B2B) customer interaction cross functionally with Sales and origin operations is required. Applicant must be creative, pro-active, “think outside the box,” and have a desire to accept or create new ideas and take calculated risks on new products and process development. Strong presentation and articulation skills are required. Must be able to effectively interact with Olam Management and customers in Europe, US and Asia/Pacific region. Comfort around higher management through excellence in articulation is required.
