As a Sous Chef, you will have the satisfaction of overseeing all aspects of a polished yet unpretentious dining arrangement. With your intricate layouts and delectable dishes you will cater to guests' sophisticated tastes, creating an experience they will savor long after they have taken the last bite.

PRIMARY JOB DUTIES:

Duties include, but are not limited, to the following: Ensure all stations are set up according to standards and maintained throughout the shift with 100% accuracy. Oversee the production of all menu items and recipes and step in to assist as necessary to ensure standards are being met and guest satisfaction is achieved. Assist in menu development and is an active participant of the management team. Demonstrate new cooking techniques, recipes, and equipment to kitchen employees. Hold all line level employees accountable for following guidelines, policies and procedures and coach/counsel as necessary. Responsible for the ordering/receiving, stocking and rotation of all kitchen items as designated by the chef while maintaining a clean and safe work environment at all times. Routinely check and inspect all kitchen equipment, refrigeration and related equipment to ensure that all are in working order. Communicate as necessary to ensure that anything out of order is reported to facilities and fixed in a timely manner. Create and administer schedules, production and prep lists for all requirements necessary. Effectively write and cost out individual recipes as needed. Continuously control product waste and maintain proper par levels of all kitchen items. Assist in overall labor control and react to business volumes as necessary to control overall labor costs. Continuously train and instruct employees on proper food preparation and sanitation to ensure quality standards are met with 100% accuracy. Maintain professional grooming and appearance and act as a role model according to established grooming and appearance policy. Other duties as assigned.
QUALIFICATIONS:

Required: At least two years of management experience in a similar professional kitchen environment. Possess a true understanding of cooking techniques and proper knife skills with the ability to teach them. Polished appearance and demeanor. Excellent customer service skills. Strong written and verbal communication skills with the ability to effectively communicate in English. High School diploma or equivalent. Ability to successfully lead and mentor a team. Ability to obtain and maintain full knowledge and understanding of company and department rules policies, procedures and state & federal regulatory requirements. At least 18 years of age.

Preferred: At least one year of experience managing a team under a Collective Bargaining Agreement. Previous experience in a large, luxury resort setting. Has completed formal culinary training or apprenticeship.

Prolonged sitting or standing and mobility. Bending and reaching. Transporting, pushing, pulling, and maneuvering items weighing up to 25 lbs. Strong eye/hand coordination. Use of standard office equipment. Basic math. Ability to push and/or pull item up to 5 lbs. Ability to distinguish letters, numbers and symbols. Ability to comply with Policies and Procedures, Job Description, daily memorandums, chemical labels (MSDS) and other instructions.
